Gingerol, is the active constituent of fresh ginger. Chemically, gingerol is a relative of capsaicin and piperine, the compounds which give chilli peppers and black pepper their respective spicyness. It is normally found as a pungent yellow oil, but also can form a low-melting crystalline solid.

Cooking ginger transforms gingerol into zingerone, which is less pungent and has a spicy-sweet aroma. When ginger is dried gingerol undergoes a dehydration reaction forming shogaols, which are about twice as pungent as gingerol. This explains why dried ginger is more pungent than fresh ginger.

Gingerol promotes heat production in brown adipose tissue,increases the level of UCP1, the key enzyme for heat production in brown adipose tissue, 4-6 times
6-gingerol and 6-gingerol in ginger can promote the gene expression of UCP1 protein in brown adipose tissue, and the level of UCP1 protein expression is 4-6 times higher than that in the blank group, promoting the heat production of brown adipose tissue and improving energy metabolism.

Gingerol has a 2-6 fold better effect on lipid oxidation than L-carnitine
Both gingerol and L-carnitine can increase the expression level of HSL and promote lipolysis. The gingerol group increased the expression of HSL by 1.5 times that of L-L-carnitine.

Increasing the expression level of Carnitine Palmitoyltransferase I
