Soy protein isolate is a method of extracting soybean meal (with oil and water-soluble non-protein components removed) into alkaline solution at low temperature, and then precipitation, washing and drying to obtain protein powder with protein content greater than 90%, whose structure and properties basically replace pure soybean protein. Soy protein isolate has nearly 20 kinds of amino acids, and contains human essential amino acids. Nutrient-rich and cholesterol-free, it is one of the few plant-based protein alternatives to animal protein.

1. Emulsification
Soy protein isolate is a surfactant that can reduce the surface tension of water and oil as well as water and air. Easy to form a stable emulsion. In the preparation of baked food, frozen food and soup food, adding soy protein isolate as emulsifier can make the product stable.
2. Hydration
Soy protein isolate contains many polar bases along its peptide chain skeleton, so it has water absorption, water retention and expansibility. The water absorption capacity of the protein isolate is much stronger than that of the protein concentrate, and it is almost not affected by temperature. The protein isolate also has the ability to retain water during processing, with the highest water retention capacity of 14g water /g protein.
3. Oil absorption
When added to meat products, protein isolate can form emulsion and gel matrix to prevent fat from moving to the surface, so it plays a role in promoting fat absorption or fat binding, which can reduce the loss of fat and juice in meat products processing and help maintain the stability of the shape. The oil absorption rate of protein isolate is 154%.
4.Gelatinicity
It makes the protein isolate have high viscosity, plasticity and elasticity. It can be used as the carrier of water, flavor agent, sugar and other complex, which is very beneficial to food processing.
5.Foamability
Among soy protein, protein isolate has the best foaming property. Using the foaming property of soy protein, food can be given loose structure and good taste.
6.Conjunctival
