Kojic acid crystals are prismatic, needle like, and colorless. Kojic acid is easily soluble in water, alcohol, and slightly soluble in ether, but difficult to dissolve in most other solvents. It can be purified by crystallization in solvents such as sublimated under reduced pressure at 150-200 ºC. The melting point reported in the literature is 151~154 ºC. Qu acid and its 5,7-diethyl derivatives exhibit specific absorption peaks at 315nm and 255nm, respectively. Kojic acid is unstable to light and heat. When a 0.5% kojic acid solution is treated at 100 ºC for 3 hours at different pH or exposed to sunlight for 5 hours, the solution turns light yellow to yellow brown in the pH range of 5-7, while the change is not significant at pH 4. The interaction between kojic acid shows a special red color, and this method can be used to quantify kojic acid. Kojic acid can reduce Fehling reagent. In its molecular structure, there is an alcohol hydroxyl near the carbonyl group, which can form salts with many metals. Other hydroxyl groups can form ether and ester derivatives.

1.Food additives
Kojic acid may develop into a new type of food additive. As a food preservative, its performance is more ideal than that of sorbic acid. Kojic acid can be used for the preservation of fresh vegetables, fruits, seafood, etc., such as soaking sliced apples, bananas, potatoes, and mushrooms in a 0.1% kojic acid solution for about 1 hour, which can effectively prevent browning. Crab meat, shrimp meat and other seafood were treated with 0.25% ~ 0.6% kojic acid and 0.1% sodium sulfite solution respectively by spray or soaking with mushrooms, spinach and other perishable vegetables. As a result, mushrooms and spinach that had undergone abnormal changes one day at room temperature remained fresh after four days, with little shrinkage. Soaking cut roses, roses, and other flowers in a 0.1% kojic acid solution at room temperature can keep them fresh for up to 8 days. As an antioxidant, kojic acid can prevent oil spoilage and prevent browning of dough. It works better when combined with ascorbic acid. Kojic acid can partially replace in color protection and can inhibit the conversion of nitrite into carcinogenic nitrosamines. Research suggests that the preservation mechanism of kojic acid is to inhibit polyphenol oxidase (i.e. tyrosinase) in plants and crustaceans. 2.Adding kojic acid to whitening cosmetics and whitening foods
Kojic acid is a tyrosinase inhibitor that can first dissolve with copper ions in tyrosinase, causing copper ions to lose their effect, thereby inhibiting the synthesis of dopa pigments. Kojic acid can inhibit the polymerization of 5,6-dihydroxyindole (DHI) and inhibit the activity of DHICA oxidase. Cosmetics that add kojic acid have functions such as skincare, moisturizing, whitening, brightening, sun protection, and freckle removal. The dosage forms include cream, lotion, lotion, soft film powder, clay glue, powder, etc. The earliest domestically developed (1987) and approved by the Ministry of Health (1991) was the 142 kojic acid freckle removing cream from Nanjing Shishantou Pharmaceutical Factory, which has two specifications: 1.5% and 2.0% kojic acid content. Mainly used for the treatment of various pigmentation disorders, such as chloasma (pregnancy spots, coffee spots), secondary pigmentation, and melanosis, with a total effective rate of over 85% for chloasma. Sanmingfeng et al. reported that cream containing 1% or 2.5% kojic acid was applied to patients with chloasma, sun exposure, age-related macula, pigment accumulation caused by inflammation, and freckles for more than 2 months. The statistical results of 204 cases were as follows: 93 cases (45.6%) were effective (symptoms were significantly reduced); 151 cases (74%) with slightly effective (slightly relieved symptoms) or above; The difference between the dosage of kojic acid at 1% and 2.5% is not significant. Kojic acid tends to turn yellow under light and heat, thereby affecting the shelf life of kojic acid cosmetics. Low temperature storage, the addition of ascorbic acid and shading agents such as 2-hydroxy-4-methoxybenzophenone can enhance its stability.
