Trehalose, also known as leaky rube and fungoides, is a non-reducing disaccharide composed of two glucose molecules with the molecular formula of C12H22O11. The structural formula of trehalose is α-D-glucopyranoside ~ α-D-glucopyranoside, which often exists as a dihydrate, and the molecular formula is C12H22O11·2H2O.
Trehalose is a typical stress metabolite, which can form a unique protective film on the cell surface under harsh environmental conditions such as high temperature, high cold, high osmotic pressure and dry water loss, effectively protecting the structure of biomolecules from being destroyed, so as to maintain the life process and biological characteristics of living organisms.

Function & Application

Function:
Trehalose is used for the lyoprotection of therapeutic proteins, particularly for parenteral administration. Other pharmaceutically relevant applications include use as an excipient for diagnostic assay tablets; for stabilization during the freeze-thaw and lyophilization of liposomes; and for stabilization of blood cells, cosmetics, and monoclonal antibodies. Trehalose may also be used in formulations for topical application.
Application: 
Common mushrooms, bread, beer, prawns and so on in life contain trehalose. At present, trehalose is produced by enzyme synthesis in China, so trehalose is a kind of sweetener.
In food, as food additives and sweeteners ,trehalose has about 45% the sweetness of sucrose at concentrations above 22%, It can reduce the sweetness, optimize the sweet and improve the flavor.
