The extraction of stevia glycosides is achieved by soaking stevia leaves in water, filtering the liquid from the leaves and stems, and further purifying it with water or food grade alcohol - a completely traditional plant extraction method. Thus obtaining a pure natural and extremely sweet sweetener - steviol glycoside that does not affect blood sugar levels.

Stevia, also known as stevioside, chemical formula C38H60O18, is a glycoside extracted from the leaves of stevia, compositae plant.  Stevia, native to Paraguay and Brazil, is high in sweetness and low in heat energy. It is 200-300 times sweeter than sucrose and has only 1/300 of the calorific value of sucrose.

Stevia is a natural sweetener and sugar substitute derived from the leaves of the plant species Stevia rebaudiana, native to Brazil and Paraguay. The active compounds are steviol glycosides, which have 30 to 150 times the sweetness of sugar, are heat-stable, pH-stable, and not fermentable. The body does not metabolize the glycosides in stevia, so it contains zero calories, like artificial sweeteners. Stevia's taste has a slower onset and longer duration than that of sugar, and some of its extracts may have a bitter or licorice-like aftertaste at high concentrations.
