Function:
The main function of Lactase is to decompose excessive lactose into glucose and Galactose.Glucose and Galactose are necessary tissues for infant brain development, which are closely related to the rapid growth of infant brain.
Lactase can also generate oligosaccharides in human body through glycoside transfer. These oligosaccharides are low molecular weight, non viscous water-soluble dietary fiber, which can greatly reduce the production of intestinal harmful substances, and play an important role in constipation and indigestion.
Application:
Lactase is mainly used in the dairy industry to convert low sweetness and low solubility lactose into sweeter and more soluble monosaccharides; Reduce the possibility of lactose crystallization in ice cream, concentrated milk, and evaporated milk, while increasing sweetness.
Lactase decomposes lactose in dairy products by its hydrolysis, and produces low lactose or lactose free dairy products for people with lactose intolerance.
In addition, acid Lactase can be added to milk powder to make special purpose milk powder, which is suitable for lactose intolerant people, especially infants and young children whose main nutritional source is dairy products.
