Isomalt, also known as paraginol, is a sugar substitute or sugar alcohol made from beets.It is the only sucrose derived binary functional sugar alcohol obtained by hydrogenation and purification of isomaltolose.First it isolates this natural sugar compound from beets, and then converts them into (usually by heating) a reducing disaccharide.The product is then hydrogenated with a catalytic converter. The resulting sugar-like substance, while having some natural sweetener properties,It is very low in glucose. It has very little effect on blood sugar and can be safely consumed by diabetics and others with blood sugar concerns.In addition, isomaltol is gluten-free. It is most often used in commercial food production and is labeled "sugar-free" on product labels.Due to its ability to extend the shelf life of certain products, isomaltol has been widely used as a preservative.
This compound has a more complex chemical composition than natural sugars. Its molecular formula is C12H24O11,which is two independent bonds of disaccharides with a crystal structure.
