L-Theanine is an amino acid unique to tea. The chemical formula is C7H14N2O3. It makes up 1%-2% by weight in dried tea. Theanine is an amide compound, chemical name: N-ethyl-L-glutamine. The natural theanine is L-type, pure product is white aciculate crystal, melting point 217ºC ~ 218ºC, specific rotation [α]D20=0.7°, very soluble in water, not soluble in ethanol, ether and other organic solvents, the aqueous solution is slightly acidic, has caramel flavor and taste similar to MSG fresh, taste threshold is 0.06%.
