L-carnosine (l-carnosine) was a crystalline solid dipeptide composed of two amino acids, β-alanine and L-histidine. Muscle and brain tissues contain high concentrations of carnosine. Carnosine was discovered along with carnitine by The Russian chemist Gulevich. Studies in the UK, South Korea, Russia and other countries have shown that carnosine has strong antioxidant power and may be beneficial to the human body. Carnosine has been shown to inhibit the formation of reactive oxygen species (ROS) and α-β unsaturated aldehydes due to the overoxidation of fatty acids in cell membranes during oxidative stress.

L-carnosine, a dipeptide of the amino acids β -alanine and histidine, has the potential to inhibit many biochemical changes associated with aging. Carnosine also has some antioxidant effects. The antioxidant mechanism of carnosine is attributed to its chelation of metal ions, superoxide dismutase (SOD) -like activity, and ROS and free radical scavenging ability.
