Bromelain is a sulfhydryl protease extracted from pineapple juice and peel. Light yellow amorphous powder, slightly peculiar odor. The molecular weight is 33000. The optimum pH values for casein, hemoglobin and baee were 6-8 and 5.0 for gelatin. The enzyme activity was inhibited by heavy metals. It is slightly soluble in water, but insoluble in ethanol, acetone, chloroform and ether. It preferentially hydrolyzes the peptide chain on the carboxyl side of basic amino acids (such as arginine) or aromatic amino acids (such as phenylalanine and tyrosine), selectively hydrolyzes fibrin, and can decompose muscle fiber, but has little effect on fibrinogen. It can be used for beer clarification, medicinal digestion, anti-inflammatory and detumescence.

Bromelain is a kind of proteolytic enzyme from pineapple juice, which can be used clinically as anti edema and anti-inflammatory drugs. After oral administration, it can strengthen the hydrolysis of fibrin in the body, dissolve fibrin and blood clots blocking the tissue, thus improving the local circulation of body fluid, leading to the elimination of inflammation and edema. When used in combination with antibiotics and chemotherapy drugs, it can promote the penetration and diffusion of drugs into the lesion. Its advantage is that it decomposes the large molecules of fibrin, but does not destroy the fibrinogen necessary for coagulation.
