Zinc Ascorbate, Besides the well-known reducing properties of vitamin C (l-ascorbic acid), complexation with metal ions is of importance in explaining its biocoordination chemistry and the potential applications of the complexes.
Since zinc is an essential trace element required for the activity of more than 200 metalloenzymes, the nature of its interaction with vitamin C is particularly important. By a proton magnetic study, Kriss et al. have reported that H2A forms mono-protonated complexes with zinc in the solution phase, in the pH range of 4-11 . The infrared spectrum of solid zinc ascorbate, prepared from the reaction of zinc hydroxide with ascorbic acid has been found to be identical to that of the aqueous solution of the complex and also to the spectrum of the ascorbate monoanion (HA), indicating that the binding is through the C(3)-O− only . Chelate-type coordination, via C(3)-O− and C(2)-O atoms, has been proposed for the mixed ligand Zn(py)2(HA)2 complex and has not been excluded for Zn(HA)2·4H2O.
