Audited Supplier Chondroitin sulfate (CS) is an acid glycosaminoglycan extracted and purified from animal cartilage. Chondroitin sulfate has different structures such as A, C, D, E, H, and K. In nature, chondroitin sulfate is mostly found in animal cartilage, laryngeal bone, nasal bone (41% in pigs), bovine and equine diaphragma, and trachea (36% to 39% in pigs), as well as in other tissues such as leg bones, ligaments, skin, and cornea. Fish cartilage is rich in content, such as shark bones containing 50% to 60%, and connective tissue containing very little.
At room temperature, it is a white powder, odorless, tasteless, highly absorbent, and easily soluble in water to form a solution with high viscosity. It is unstable when exposed to high temperatures or acids, mainly due to deacetylation or degradation into monosaccharides or polysaccharides with smaller molecular weights. Insoluble in organic solvents such as ethanol and ether, its salts are relatively stable to heat and do not damage when heated at 80 ºC.
