Fructose oligosaccharides are also called fructooligosaccharides or sucrose trisaccharide oligosaccharides. Fructose-oligosaccharides are commonly found in many fruits and vegetables that are commonly consumed. Kestose, kestotetraose and kestose pentaose, which are composed of sucrose molecules combined with 1-3 fructose molecules through β-(1→2) glycosidic bonds, are linear heterooligosaccharides composed of fructose and glucose. It is made of sucrose as raw material, transformed and refined through modern bioengineering technology-fructosyltransferase.
