Curcumin, also known as curcumin and acid yellow, is a natural phenolic antioxidant extracted from the rhizome of turmeric plant, curcumin, curcumin, mustard, curry, turcumin, etc. The main chain is unsaturated aliphatic and aromatic groups. It is a rare pigment with diketone in the plant world, belonging to diketone compounds, and is commonly used as seasoning and food coloring without toxicity. It has gallbladder, anti-infection, uterine paroxysmal contraction, reducing blood cholesterol, antiviral, antibacterial, antioxidant (stronger than α-tocopherol), anticoagulation, lowering blood lipids and anti-atherosclerosis pharmacological effects. In 1985, Indian scholar Kuttan first proposed the anticancer effect of curcumin. In recent years, curcumin has been found to inhibit the generation, proliferation and metastasis of a variety of tumor cells. The National Cancer Institute of the United States classifies it as a third-generation tumor therapy. When combined with mitomycin C, the dosage of mitomycin C can be reduced, and the nephrotoxicity and bone marrow suppression caused by mitomycin C alone can be reduced, and the efficacy of mitomycin C in the treatment of breast cancer can be improved. Curcumin has protective effects on liver damage induced by various toxic substances such as carbon tetrachloride, aflatoxin B1, acetaminophen and cyclophosphamide, significantly reducing the activity of alkaline phosphatase and R-glutamyl transpeptide (r-GT) in animals with alcoholic liver damage (ALI), and preventing the occurrence of experimental fatty liver.

Function
Curcumin has antioxidant, anti-inflammatory, antiviral and antifungal actions. Turmeric is effective in reducing post-surgical inflammation.

1. Mainly used as flavor additive to pigments and foods
2. Now it is used as a food coloring since it normally gives food (slightly yellow color) is used to protect food products from sunlight.
