Maltose, also known as hydrogenated maltose, is chemically named 1,4-o- α- D-glucopyranosyl-D-sorbitol, which is composed of 1 molecule of glucose α- A disaccharide formed by connecting a 1,4-bond to a sorbitol. The molecular formula is C12H24O11, and the relative molecular weight is 344.31. Maltose alcohol is colorless and transparent crystal, which is easily soluble in water, but difficult to dissolve in methanol and ethanol.
Maltose is a new type of sweetener, which is widely used in the processing of sugary food. The sweeteners that people used to eat were basically high calorie and sweet sugars, which were easy to cause diseases such as diabetes, obesity, arteriosclerosis and heart failure. Maltose alcohol has high sweetness, low calorie, good safety, sufficient raw materials, simple manufacturing process, and unique properties that other sweeteners do not have.
Maltose alcohol is obtained from the hydrogenation of maltose, which is an earlier sugar alcohol used in low calorie sweeteners. There are two kinds of products: one is colorless crystalline product; The second is a colorless viscous liquid. Other indicators are maltose alcohol powder, which is made by spray drying of maltose alcohol. Except that the water content is ≤ 0.1%, other indicators are the same as liquid maltose alcohol.
The semi acetal hydroxyl group of maltose is reduced to hydroxyl group and converted to maltose alcohol. The sweetness is increased. The relative sweetness is about 0.9 times that of sucrose. The taste is pure and close to sucrose, but it is not digested, nor metabolized by oral microorganisms, and will not cause dental caries. It is a calorie free food sweetener, especially suitable for patients with diabetes and obesity.
